Sweet and Sour Cabbage

Prepare pork shoulder with apple juice or beer in the oven and bake this dish alongside, a perfect accompaniment to any pork dish.
- 3 pounds head of red cabbage
- 1/4 cup butter
- Salt
- Freshly ground black pepper
- 1 teaspoon or more fresh grated nutmeg
- 3 tablespoons white vinegar
- 1/4 cup brown sugar
- 1 cup golden raisins
- 2 apples, peeled, cored and diced (about 2 cups) s
- 1 tsp New Ingredient
- Preheat oven to 325°.
- Remove the core from the cabbage and slice the cabbage into fine shreds.
- In a heavy casserole with a lid, melt the butter. Add the cabbage and sauté for several minutes or until the cabbage wilts.
- Add the remaining ingredients, cover and bring to a boil.
- Remove from the heat and place in the oven. Cook for about 1 ½ hours, stirring every 30 minutes. Remove from the oven and keep warm until ready to serve.
