Pork With Veggies

Start a pot of rice and while it's cooking, combine leftover star anise flavored pork with your favorite vegetables for a quick, satisfying meal in a rice bowl.
- 1 tablespoon vegetable oil
- 2 cloves garlic, peeled and crushed
- 5 cups vegetables in bite sized pieces such as broccoli, cauliflower, celery, carrots, sweet peppers, onions, green onions, asparagus, green beans, bok choy
- 2 cups cooked Pork Shoulder with Star Anise, cut into bite sized pieces
- 1 cup braising liquid from Pork Shoulder with Star Anise
- 2 tablespoons cornstarch mixed with water
- 2 teaspoons sesame oil
- Heat the oil in a large skillet or wok over high heat. Add the garlic and stir-fry for 30 seconds.
- Add the vegetables, adding longer cooking vegetables like carrots, onions and broccoli first and leafy greens last. Stir-fry until vegetables are just crisp tender.
- Add the pork and toss together. Add the braising liquid to season the mixture. Add a little of the cornstarch to thicken the liquid. Drizzle with sesame oil and remove from heat.
- Scoop the mixture atop hot rice in a bowl and serve immediately.
