Pork Shoulder with Pasta

Combine simply seasoned pork shoulder leftovers with canned tomatoes for a quick and easy pasta dish. Serve a fresh green salad alongside and you'll have a delicious weeknight meal.
- 8 ounces of your favorite pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 28-ounce can tomatoes
- 2 cups cooked pork shoulder, shredded
- Braising liquid from the pork shoulder
- Parmesan cheese for garnish
- Bring a large pot of water to a boil. Add a tablespoon of salt and the pasta; cook pasta until al dente.
- While the pasta is cooking, heat a large skillet over medium heat and add the olive oil. Add the garlic and sauté for a minute, being careful not to burn the garlic. Add the tomatoes and cook for 5 minutes. Add the pork and mix together.
- When the pasta is cooked, drain it and add it to the sauté pan. Toss together, adding some of the braising liquid to moisten the pasta. Transfer to a serving dish and garnish with cheese. Serve with additional cheese.
