Starters
Use parmigiano reggiano in this dip if you can – it will make the flavor just superb. Leftovers can be melted on top of toast or use it to top a broiled tomato.
- 8 ounces parmesan cheese, cut into chunks
- 1 clove garlic
- 1 teaspoon freshly ground black pepper
- 4 fresh basil leaves
- 1 green onion, roughly chopped
- 1 teaspoon red pepper flakes
- 3/4 cup olive oil
- Place all ingredients in a food processor and blend until smooth. Transfer to a covered container and refrigerate until ready to serve. Serve at room temperature.
