“Da Boom” Mango Salsa

- 2 cups mangoes, mix of Pirie and Haden recommended
- 1/2 cup Maui onion
- 1/2 cup sweet red pepper
- 3 teaspoons Chinese parsley
- 1 small chili pepper, finely chopped
- 1 teaspoon grated ginger
- 1 teaspoon rice vinegar
- 1 teaspoon lemon juice
- 1/8 teaspoon red Hawaiian salt, crushed
- 1/4 teaspoon li hing mui powder
- Chop mangoes, onions, red pepper, and parsley and combine in a large bowl. Mix in the rest of the ingredients and refrigerate for an hour.
- Serve with fish, chicken or chips.
