“Da Boom” Mango Salsa

Ingredients
  • 2 cups mangoes, mix of Pirie and Haden recommended
  • 1/2 cup Maui onion
  • 1/2 cup sweet red pepper
  • 3 teaspoons Chinese parsley
  • 1 small chili pepper, finely chopped
  • 1 teaspoon grated ginger
  • 1 teaspoon rice vinegar
  • 1 teaspoon lemon juice
  • 1/8 teaspoon red Hawaiian salt, crushed
  • 1/4 teaspoon li hing mui powder
Directions
  • Chop mangoes, onions, red pepper, and parsley and combine in a large bowl. Mix in the rest of the ingredients and refrigerate for an hour.
  • Serve with fish, chicken or chips.
