“Broke Da Mouth” Mango Chutney

- 8 cups mangoes, ripe but firm, sliced small, (mix of Pirie and Haden)
- 1 Maui onion, chopped
- 4 cloves garlic, minceds
- 2 tablespoons ginger, minced
- 1 chili pepper, seeded and minced
- 3/4 cup cider vinegar
- 3 cups s brown sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon red Hawaiian salt
- 1 cup raisins, rinsed and chopped
- 1 cup macadamia nuts, chopped
- 1 tablespoon lemon juice
- Combine all the ingredients except mangoes and lemon juice, and bring to a boil, uncovered on medium heat, approximately 20 minutes.
- Add mangoes and continue cooking until mangoes are translucent, stirring frequently, approximately 20 minutes.
- Stir in lemon juice.
- Pour into jars.
