“Broke Da Mouth” Mango Chutney

Ingredients
  • 8 cups mangoes, ripe but firm, sliced small, (mix of Pirie and Haden)
  • 1 Maui onion, chopped
  • 4 cloves garlic, minceds
  • 2 tablespoons ginger, minced
  • 1 chili pepper, seeded and minced
  • 3/4 cup cider vinegar
  • 3 cups s brown sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon red Hawaiian salt
  • 1 cup raisins, rinsed and chopped
  • 1 cup macadamia nuts, chopped
  • 1 tablespoon lemon juice
Directions
  • Combine all the ingredients except mangoes and lemon juice, and bring to a boil, uncovered on medium heat, approximately 20 minutes.
  • Add mangoes and continue cooking until mangoes are translucent, stirring frequently, approximately 20 minutes.
  • Stir in lemon juice.
  • Pour into jars.

Best eaten with curries or stews!
