Auntie Roz Mango Bread

- 2 cups all purpose flour
- 1 1/4 cups of sugar
- 1 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 eggs
- 1/2 cup melted unsalted butter
- 1 teaspoon vanilla extract
- 2 cups pealed pureed fresh mangos
- 1/2 cup diced mango
- 1 optional slice of mango on top of batter
- Put all dry ingredients in bowl and set aside: 2 cups all-purpose flour, 1.25 cup of sugar, 1 teaspoon baking soda, 1.5 teaspoon baking powder, 1 teaspoon cinnamon, 0.25 teaspoon salt
- Put following ingredients in separate bowl and mix until blended: 2 eggs, 0.5 cup unsalted butter (melted), 1 teaspoon vanilla extract, 2 cups pealed, pureed, fresh mangos and 0.5 cup diced mango, 1 optional-place slice of mango on top of batter
- Combine all ingredients from above steps until blended and spoon into well0greased (use vegetable oil) pan or pans, 0.75 full and place in middle rack of oven at 350 degrees, 1 hour or until toothpick inserted in middle, comes out clean. Let cool, turn up side down and cake should fall out of pan. Optional-garnish with mango slices.
