Murakami Family Pickled Mango

- 1 gallon sliced, very green and firm mangoes
- 4 c waters
- 5 c sugars
- 1/4 c salt
- 2 c Japanese rice vinegars
- 1 lb “Enjoy” brand Premium red Li Hing Mui with seed – very important
- Peel green mango.
- Slice into thin strips and discard seed. Set aside.
- Bring sugar, vinegar and salt to a boil.
- Continue boiling until sugar dissolves.
- Let cool.
- Pour cooled liquid over mango slices and stir in Li Hing Mui seed. Mix well.
- Store in airtight container in refrigerator.
