Mona’s Mango Bread

- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 1/4 cups granulated sugar
- 3 eggs, slightly beaten
- 1 cup vegetable oil
- 2 cups finely diced mangoes
- 2 teaspoons freshly squeezed lemon juice
- Preheat oven to 350 degree.
- Butter and flour two 8.5 x 4.5 x 2.5 inch metal loaf pans.
- Sift together flour, baking soda, cinnamon, salt, and sugar in large bowl.
- Whisk eggs, oil, mangoes, and lemon juice in medium bowl to blend.
- Make a well in the center of the dry mixture. Add egg mixture to center of dry mixture and mix well.
- Divide batter between prepared loaf pans, spreading evenly, and bake in middle of oven until golden brown and a wooden pick or skewer comes out clean, 50 minutes to one hour.
- Cool loaves in pans on a rack 10 minutes. Turn breads out onto rack and cool completely.
