Mango Pickle

Ingredients
  • 1/2 lb green mango cubes
  • 1 pinch of salt
  • 1 pinch of curry powder
  • 1 tsp creek seeds
  • 1 tsp mustard seeds
  • 2 tbsps brown sugar
  • 4 whole black peppers
  • 4 whole cloves
  • 2 tbsps canola oil
  • 1/4 tsp cumin seeds
Directions
  • Cut mango into medium size cubes.
  • Add salt and curry powder, mix well and let stand for 2 hours.
  • Drain all excess water from the mango mixture.
  • Spread out on cookie pan and let air dry for 1 hour.
  • In the meantime, heat oil in a medium size pan.
  • Add cumin seeds, let sizzle.
  • Add all remaining ingredients, mix well, remove from heat and let sauce cool.
  • Add the dry mango to the sauce, mix well.
  • Store in bottle and refrigerate.
  • Assorted breads, crackers, Asian dishes, sandwiches, grilled vegetables and meats.
