Mango Pickle

- 1/2 lb green mango cubes
- 1 pinch of salt
- 1 pinch of curry powder
- 1 tsp creek seeds
- 1 tsp mustard seeds
- 2 tbsps brown sugar
- 4 whole black peppers
- 4 whole cloves
- 2 tbsps canola oil
- 1/4 tsp cumin seeds
- Cut mango into medium size cubes.
- Add salt and curry powder, mix well and let stand for 2 hours.
- Drain all excess water from the mango mixture.
- Spread out on cookie pan and let air dry for 1 hour.
- In the meantime, heat oil in a medium size pan.
- Add cumin seeds, let sizzle.
- Add all remaining ingredients, mix well, remove from heat and let sauce cool.
- Add the dry mango to the sauce, mix well.
- Store in bottle and refrigerate.
- Assorted breads, crackers, Asian dishes, sandwiches, grilled vegetables and meats.
