Mango Molasses Cake

- 1/2 cup Crisco shortening
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla
- 1 cup molasses
- 2 1/2 cups all purpose flour
- 1 tsp salt
- 1 tbsp cinnamon
- 1 tsp ground ginger
- 2 tsps baking soda
- 1 cup boiling water
- 2 cups peeled and diced fresh mango
- Preheat oven to 350 degree.
- Pam spray a 9” by 13” pan.
- Cream shortening and sugar until fluffy.
- Add eggs and vanilla then beat well.
- Stir in molasses. Combine flour, salt, cinnamon and ginger, stir into batter.
- Stir baking soda into boiling water then beat into batter, combing well.
- Fold in mango then pour into pan and bake at 350 degrees for 35 to 40 minutes or until cake springs back when lightly pressed and pulls away from the edge of the pan.
- Cool in pan on a rack then dust with powdered sugar.
- Serve with whipped cream or ice cream.
