Liquid Gold Mango Sauce and Mango Lava Sauce

Ingredients
  • 4 cups Mango Puree – strained
  • 9 eggs yolks
  • 1 cup sugar
  • 1 tbs ginger juice
  • 1 chili pepper flakes – add to Lava sauce
Directions
  • Whisk yolks and sugar together set aside.
  • Over double boiler, bring mango puree and ginger juice up to steaming.
  • Take puree of heat and slowly whisk into egg mixture.
  • After fully incorporated, put back intopot and over boiler again.
  • Whisk continuously and gently until steaming and thick as an ice cream shake.
  • Remove from heat.
  • Can be served warm or chilled.
