Liquid Gold Mango Sauce and Mango Lava Sauce

- 4 cups Mango Puree – strained
- 9 eggs yolks
- 1 cup sugar
- 1 tbs ginger juice
- 1 chili pepper flakes – add to Lava sauce
- Whisk yolks and sugar together set aside.
- Over double boiler, bring mango puree and ginger juice up to steaming.
- Take puree of heat and slowly whisk into egg mixture.
- After fully incorporated, put back intopot and over boiler again.
- Whisk continuously and gently until steaming and thick as an ice cream shake.
- Remove from heat.
- Can be served warm or chilled.
