Mango Chutney

- 7 cups white sugar
- 2 cups white vinegar
- 25 sliced frozen mangos
- 1 large chopped onion
- 1 tablespoon minced garlic
- 1/4 cup minced ginger
- 1/2 to 1 cup raisin
- 8 Hawaiian chili peppers with minced seeds removeds
- Peel and slice 25-green to half ripe mangoes into 1.5” by 2” about 0.25” to 0.5” thick pieces, freeze for a day or more.
- Boil sugar and vinegar for 15 to 20 minutes, in an 8 quart pot, stirring constantly.
- Add rest and cook for 25 minutes, stirring constantly.
