Mango Chutney

Ingredients
  • 7 cups white sugar
  • 2 cups white vinegar
  • 25 sliced frozen mangos
  • 1 large chopped onion
  • 1 tablespoon minced garlic
  • 1/4 cup minced ginger
  • 1/2 to 1 cup raisin
  • 8 Hawaiian chili peppers with minced seeds removeds
Directions
  • Peel and slice 25-green to half ripe mangoes into 1.5” by 2” about 0.25” to 0.5” thick pieces, freeze for a day or more.
  • Boil sugar and vinegar for 15 to 20 minutes, in an 8 quart pot, stirring constantly.
  • Add rest and cook for 25 minutes, stirring constantly.
