Kahuku Mango Tango

Ingredients
  • 2 cloves garlics, peeled and crushed
  • 1/2 teaspoon Hawaiian or kosher salt
  • 3 tablespoons unseasoned rice vinegar
  • 2 teaspoons sugar – raw or granulated
  • 2 teaspoons sambal olek – to taste
  • 1 or 2 firm ripe kahuku mango
  • 1/2 cup finely diced red onion
  • 1/4 cup chopped fresh cilantro
Directions
  • Mash the garlic with salt with the side of knife until combined into a paste (this mellows out the garlic).
  • Transfer garlic/salt mixture to bowl-whisk in vinegar, sugar and sambal olek.
  • Add mango, onions and cilantro.
  • Toss to mix.
  • Serve as a condiment for fish, meat and poultry.
