Kahuku Mango Tango

- 2 cloves garlics, peeled and crushed
- 1/2 teaspoon Hawaiian or kosher salt
- 3 tablespoons unseasoned rice vinegar
- 2 teaspoons sugar – raw or granulated
- 2 teaspoons sambal olek – to taste
- 1 or 2 firm ripe kahuku mango
- 1/2 cup finely diced red onion
- 1/4 cup chopped fresh cilantro
- Mash the garlic with salt with the side of knife until combined into a paste (this mellows out the garlic).
- Transfer garlic/salt mixture to bowl-whisk in vinegar, sugar and sambal olek.
- Add mango, onions and cilantro.
- Toss to mix.
- Serve as a condiment for fish, meat and poultry.
