Green Mango Chutney

Ingredients
  • 1 cup peeled shredded green mango
  • 1/2 tsp salt
  • 1 cup sugar
  • 2 tbsps canola oil
  • 1/4 tsp cumin seeds
  • 2 whole cloves
  • 3 whole cardamoms
  • 1/4 tsp red chili powder
Directions
  • Mix 1/4 teaspoon salt with washed, peeled, shredded green mango. Let it sit for 10 minutes.
  • Remove all the excess water in the mixture by squeezing in between two hands.
  • Add 1 cup sugar to 1 cup of squeezed out mango mixture, mix well.
  • Heat up canola oil in a non-stick pot, add cumin, cloves and cardamom.
  • Once the spices start to sizzle, add the mango/sugar mixture, and mix well.
  • Let it simmer on medium heat for 10 minutes, stirring occasionally.
  • Take off heat after 10 minutes of simmering.
  • Add the other 0.25 tsp salt, red chili powder and mix well. Add more salt or chili powder to taste. Optional: let it cool.
  • Once cool, bottle it and keep refrigerated.
  • Enjoy with Indian curries, various spicy dishes and breads.
