Green Mango Chutney

- 1 cup peeled shredded green mango
- 1/2 tsp salt
- 1 cup sugar
- 2 tbsps canola oil
- 1/4 tsp cumin seeds
- 2 whole cloves
- 3 whole cardamoms
- 1/4 tsp red chili powder
- Mix 1/4 teaspoon salt with washed, peeled, shredded green mango. Let it sit for 10 minutes.
- Remove all the excess water in the mixture by squeezing in between two hands.
- Add 1 cup sugar to 1 cup of squeezed out mango mixture, mix well.
- Heat up canola oil in a non-stick pot, add cumin, cloves and cardamom.
- Once the spices start to sizzle, add the mango/sugar mixture, and mix well.
- Let it simmer on medium heat for 10 minutes, stirring occasionally.
- Take off heat after 10 minutes of simmering.
- Add the other 0.25 tsp salt, red chili powder and mix well. Add more salt or chili powder to taste. Optional: let it cool.
- Once cool, bottle it and keep refrigerated.
- Enjoy with Indian curries, various spicy dishes and breads.
