Pot of Gold Pickled Mango

Ingredients
  • 1 or more green mangoes – peeled and sliced
  • 1 part water
  • 1/2 part golden cane vinegar
  • 1/2 part white sugar
  • 1/4 part honey
  • 1/4 part golden brown sugar
  • 1 hawaiian salt – to taste
  • 1 to 2 piece star anise
  • 1 dried fruit for flavor – depth and color
Directions
  • Set mango and fruit aside. Mix the rest of ingredients making sure sugar and honey are well dissolved.
  • Adjust flavor, add mango and fruit.
  • Chill and least overnight.
