Pot of Gold Pickled Mango

- 1 or more green mangoes – peeled and sliced
- 1 part water
- 1/2 part golden cane vinegar
- 1/2 part white sugar
- 1/4 part honey
- 1/4 part golden brown sugar
- 1 hawaiian salt – to taste
- 1 to 2 piece star anise
- 1 dried fruit for flavor – depth and color
- Set mango and fruit aside. Mix the rest of ingredients making sure sugar and honey are well dissolved.
- Adjust flavor, add mango and fruit.
- Chill and least overnight.
