Lup Cheong Stcky Rice

- 2 cups sticky rice
- 8 pieces dried shiitake mushrooms, rehydrated and diced
- 3 pieces lup cheong, diced
- 1 tablespoon shoyu
- 2 cups water
- Place rice in a bowl and add cold water to cover by 1 inch. Soak rice for at least 2 hours.
- Stir-fry diced lup cheong in a hot wok or sautee pan for 2 to 3 minutes, until some of the fat has rendered. Add mushrooms and stir-fry briefly. Drain the rice and add to the wok, stirring for about 2 minutes. Add the soy sauce and 2 cups water. Stir until most of the liquid is absorbed, for about 3 minutes. At this point, the rice grains should be only half cooked.
- Bring water in a steamer to a boil. Pour the rice into a large bowl or casserole dish and place in the steamer. Steam for about 30 minutes. Remove carefully from the steamer and either unmold sticky rice onto a plate or serve directly in the bowl or casserole dish.
