Lobster Sausage with a Coconut Curry Sauce

Ingredients

Lobster sausage

  • 1 pound fresh lobster meat
  • 1/8 cup Chinese canned water chestnut
  • 1/8 cup fresh shiitake mushroom
  • 1/2 pound scallop, large cut
  • 1/2 pound shrimp, large cut
  • 1/2 pound shrimp, pulverized to paste
  • 1/8 cup fresh basil
  • 1 1/2 tablespoons cooked garlic
  • 1 1/2 tablespoons cooked ginger
  • 1/8 cup green onions, minced
  • 2 ounces Thai fish sauce
  • 1/8 cup pistachio
  • 1/8 cup fresh cilantro, chopped
  • 1/8 cup fresh mint, chopped
  • 1 egg, whipped
  • 1 ounce sweet butter
  • pork sausage casing

Lobster coconut curry sauce

  • 1/2 pound bacon
  • 3 ounces butter, unsalted
  • 1 pound onions, roughly chopped
  • 10 kaffir lime leaves
  • 4 blades lemongrass
  • 1/2 pound carrots, roughly chopped
  • 1/2 pound celery, roughly choped
  • 5 pounds lobster carcass
  • 4 tomatoes
  • 1/4 cup basil stems
  • 1/4 cup cilantro, chopped
  • 1/4 cup green onions
  • 1 gallon water
  • 1 quart coconut milk
  • 2 ounces palm sugar
  • Salt and pepper to taste
  • Coconut milk, to taste
  • Fish sauce, to taste
  • Red curry paste, to taste
Directions

Lobster sausage

  • Combine all the ingredients. Place into the sausage casing.
  • Blanch the sausages in hot water and sear to golden brown.

Lobster coconut curry sauce

  • In a large saute pan, render bacon until crispy and remove the fat. Add butter, onions, lemongrass, kaffir leaves, celery and carrots and cook until the vegetables are soft.
  • Add the lobster shells, tomatoes, basil stems, cilantro, green onions and water and reduce the stock by 50%. Then add the palm sugar and coconut milk. Reduce till just shy of a napped consistency. Season with curry paste and fish sauce.
  • Strain the lobster cream through a fine sieve and continue to reduced if needed. Season with salt and pepper and blend. Color should be bright and taste flavorful.

To plate

  • Pour enough lobster coconut curry sauce to coat the bottom of a shallow bowl. Slice ends off lobster sausage and place on top of sauce.
