Oven Roasted Kalua Pig

Ingredients
  • 10 pounds pork butt (picnic shoulder)
  • 5 tablespoons Hawaii alae rock salt (coarse sea salt can be substituted)
  • 8 ti or banana leaves (can be found in Asian grocery stores)s
  • 4 tablespoons liquid smoke
  • 1 cup water
Directions
  • Preheat a 500 degree oven. Rub the pork with salt. Wrap pork in leaves. Place in covered pot with water on the bottom. Cover tightly with foil. Cook for 45 minutes at 500 and then reduce heat to 350 for 3 to 3 and half hours or until the meat can easily be shredded. Shred and sprinkle with liquid smoke. Mix and serve with its own juices.
  • Note: This recipe is delicious with a whole turkey as well.
