Curry Chicken Salad

- 3 cups cooked and diced roasted chicken
- 2 stalks celery, finely diced
- 1 tablespoon finely minced green onion
- 1/3 cup mayonnaise
- 1/3 cup mango chutney
- 1 teaspoon curry powder
- 1/2 teaspoon salt
- Freshly ground pepper
- Combine all ingredients in a bowl and mix well. Chill for an hour before serving. Garnish with fresh mango if available. Or stuff this filling in pita pockets or create a traditional sandwich; serve it atop a plate of fresh greens or in a half papaya.
