Curry Chicken Salad

Ingredients
  • 3 cups cooked and diced roasted chicken
  • 2 stalks celery, finely diced
  • 1 tablespoon finely minced green onion
  • 1/3 cup mayonnaise
  • 1/3 cup mango chutney
  • 1 teaspoon curry powder
  • 1/2 teaspoon salt
  • Freshly ground pepper
Directions
  • Combine all ingredients in a bowl and mix well. Chill for an hour before serving. Garnish with fresh mango if available. Or stuff this filling in pita pockets or create a traditional sandwich; serve it atop a plate of fresh greens or in a half papaya.
