Chicken Pho

Ingredients
  • 6 cups chicken stock
  • 1 stalk lemongrass
  • 2 green onions, white part crushed
  • 2 quarter-size pieces fresh ginger
  • 2 star anises
  • 2 tablespoons fish sauce
  • 8 ounces flat rice noodles, cooked
  • 1 cup cooked chicken
  • 2 green onions, chopped
  • 2 tablespoons minced cilantro

Table condiments

  • bean sprouts
  • Thai basil leaves
  • Jalapeno or Serrano chili pepper, sliced
  • Lime wedges
  • Sriracha sauce
  • Hoisin sauce
Directions
  • In a medium saucepan, place the stock, lemon grass, green onion, ginger and star anise and bring to a boil. Lower the heat and simmer for 30 minutes to extract the flavor of the herbs and spices. Add fish sauce and taste. Add salt if necessary.
  • Divide noodles among 4 bowls. Top with chicken, green onion and cilantro. Ladle hot broth over the noodles and serve immediately with condiments.
