Chicken Pho

- 6 cups chicken stock
- 1 stalk lemongrass
- 2 green onions, white part crushed
- 2 quarter-size pieces fresh ginger
- 2 star anises
- 2 tablespoons fish sauce
- 8 ounces flat rice noodles, cooked
- 1 cup cooked chicken
- 2 green onions, chopped
- 2 tablespoons minced cilantro
Table condiments
- bean sprouts
- Thai basil leaves
- Jalapeno or Serrano chili pepper, sliced
- Lime wedges
- Sriracha sauce
- Hoisin sauce
- In a medium saucepan, place the stock, lemon grass, green onion, ginger and star anise and bring to a boil. Lower the heat and simmer for 30 minutes to extract the flavor of the herbs and spices. Add fish sauce and taste. Add salt if necessary.
- Divide noodles among 4 bowls. Top with chicken, green onion and cilantro. Ladle hot broth over the noodles and serve immediately with condiments.
