Mixed Greens and Papaya with Lilikoi Dressing

For dressing
- 3 tablespoons fresh lilikoi juice
- 1 shallot, peeled and chopped finely
- 5 tablespoons macadamia nut oil
- salt and freshly ground black pepper
For salad
- 1/4 pound arugula
- 1/4 pound mixed baby greens
- 1 papaya, peeled, seeds discarded, cubed into 1-inch piece
- 3 ounces mung bean sprouts
- 1/4 pound small tomatoes, such as Ho Farms family tomatoes or Hamakua Springs sweets, halved
- For dressing, combine lilikoi juice and shallot in a small bowl and add oil in a slow stream, whisking until well blended. Season to taste with salt and pepper.
- Toss arugula, greens, papayas, sprouts and tomatoes with dressing.
