Mixed Greens and Papaya with Lilikoi Dressing

Ingredients

For dressing

  • 3 tablespoons fresh lilikoi juice
  • 1 shallot, peeled and chopped finely
  • 5 tablespoons macadamia nut oil
  • salt and freshly ground black pepper

For salad

  • 1/4 pound arugula
  • 1/4 pound mixed baby greens
  • 1 papaya, peeled, seeds discarded, cubed into 1-inch piece
  • 3 ounces mung bean sprouts
  • 1/4 pound small tomatoes, such as Ho Farms family tomatoes or Hamakua Springs sweets, halved
Directions
  • For dressing, combine lilikoi juice and shallot in a small bowl and add oil in a slow stream, whisking until well blended. Season to taste with salt and pepper.
  • Toss arugula, greens, papayas, sprouts and tomatoes with dressing.
