Ginger and Tangerine Purple Sweet Potato Mash

- 3 pounds purple sweet potatoes
- 1/2 cup honey
- 1/2 cup fresh tangerine juice
- 4 tablespoons macadamia nut oil
- 1/2 teaspoon freshly grated nutmeg
- 1 tablespoon minced fresh Hawaiian ginger
- salt and pepper to taste
- Preheat oven to 400°F. Prick sweet potatoes all over with a fork and roast for 1 hour, or until you can pierce a potato easily with a fork.
- When potatoes are done roasting, peel and mash. Combine with rest of ingredients. Scoop into an oven-proof dish, drizzle 2 Tablespoons honey on top, and bake uncovered for about 30 minutes, or until surface is light brown.
