Mamey Sapote Pie with Breadfruit Crust

Mamey sapote is a fruit that tastes like pumpkin pie; hence, the perfect substitute for pumpkin in our locavore Thanksgiving.
For filling
- 1/2 cup brown sugar
- 1 teaspoon minced fresh Hawaiian ginger
- 1/2 teaspoon freshly grated nutmeg
- 1 teaspoon salt
- 1 1/2 cups mamey sapote puree
- 3 eggs
- 1 cup coconut milk
For crust
- 2 cups mashed ripe breadfruit
- 1 egg
- 2 tablespoons macadamia nut oil
- Preheat oven to 350 degrees F.
- For crust, mix breadfruit, egg and oil until well blended. Spread evenly into a greased pie pan. Bake for 20 minutes, or until golden.
- While crust is baking, whisk together sugar, spices, salt. Stir in the mamey sapote puree. Stir in eggs and coconut milk until just combined. Pour filling into pie crust. Bake for 45 minutes, or until edges are set.
- Let cool and serve with haupia sorbet, if desired.
