Grilled Mahi with Preserved Meyer Lemon Relish

Ingredients

For fish

  • 4 (5-ounce)s mahi fillets
  • 2 tablespoons macadamia nut oil
  • salt and pepper

For relish

  • 8 wedges preserved Meyer lemons
  • 2 shallots, peeled and chopped
  • 2 teaspoons chopped parsley
  • 1 tablespoon macadamia nut oil
Directions
  • Rub grill with oil and season mahi with salt and pepper. Grill over medium high heat until done (time depends on thickness of fillet), flipping fillets over halfway through.
  • For relish, chop the preserved lemon and stir together with shallots, parsley and oil.
  • Serve fish topped with a spoonful of Meyer lemon relish.
