Grilled Mahi with Preserved Meyer Lemon Relish

For fish
- 4 (5-ounce)s mahi fillets
- 2 tablespoons macadamia nut oil
- salt and pepper
For relish
- 8 wedges preserved Meyer lemons
- 2 shallots, peeled and chopped
- 2 teaspoons chopped parsley
- 1 tablespoon macadamia nut oil
- Rub grill with oil and season mahi with salt and pepper. Grill over medium high heat until done (time depends on thickness of fillet), flipping fillets over halfway through.
- For relish, chop the preserved lemon and stir together with shallots, parsley and oil.
- Serve fish topped with a spoonful of Meyer lemon relish.
