Easy Hawaiian Chicken

Ingredients

Chicken

  • 1 1/2 pounds boneless, skinless chicken
  • salt and pepper to taste

Sauce

  • 1 tablespoon soy sauce
  • 1 tablespoon white vinegar
  • 2 tablespoons sugar
  • 2 cups water
  • 2 tablespoons cornstarch
  • 1/2 cup sliced fresh green pepper
  • 1/2 cup sliced fresh onion
  • 12 ounces can pineapple chunks, drained
Directions
  • Spray a light coat of vegetable oil in a non-stick pan. Sprinkle the chicken with salt and pepper and arrange in a skillet. Pan-fry until golden brown on all sides and tender.
  • In a saucepan, combine water, soy sauce, vineagar and sugar, and stir in cornstarch. Add bell pepper, onion and pineapple. Heat through.
  • Pour over the cooked chicken. For a healthy meal, serve with brown rice and a fresh salad with local greens and seasonal veggies such as Nalo Greens and Kahuku Corn.
