Easy Hawaiian Chicken

Chicken
- 1 1/2 pounds boneless, skinless chicken
- salt and pepper to taste
Sauce
- 1 tablespoon soy sauce
- 1 tablespoon white vinegar
- 2 tablespoons sugar
- 2 cups water
- 2 tablespoons cornstarch
- 1/2 cup sliced fresh green pepper
- 1/2 cup sliced fresh onion
- 12 ounces can pineapple chunks, drained
- Spray a light coat of vegetable oil in a non-stick pan. Sprinkle the chicken with salt and pepper and arrange in a skillet. Pan-fry until golden brown on all sides and tender.
- In a saucepan, combine water, soy sauce, vineagar and sugar, and stir in cornstarch. Add bell pepper, onion and pineapple. Heat through.
- Pour over the cooked chicken. For a healthy meal, serve with brown rice and a fresh salad with local greens and seasonal veggies such as Nalo Greens and Kahuku Corn.
