How to Roast a Chicken

A roast chicken is perhaps the best and simplest of foods a home cook can master. There are really no tricks to producing a crispy skinned, golden brown roast chicken – just start with the plumpest chicken you can find, add a few basic seasonings and roast it in a hot oven.

Roast enough chicken for leftovers, and you can also enjoy chicken tacos during the weeknight, or a curried chicken salad for lunch.
