In ancient times raw fish was sliced off the bone, seasoned with salt and kukui nuts and eaten in chunks, with the skin and smaller bones spit out.

Today’s versions of poke—found at virtually every pupu party and supermarket fish counter across the islands—are as varied and eclectic as the successive waves of newcomers who adapted and adopted the popular dish.
