Master Class: Roy Yamaguchi Puts Hawaii Products Front and Center

Roy Yamaguchi provides recipes from his private holiday cooking demo for Think Global, Live Local contest winner Roxane Uyehara and friends, but he admits he rarely creates the same dish twice.

Roy_feature"Recipes are not things that you follow," he says. "Cooking's from the heart. Once you have a recipe, what you have to do is make it your own."

During the demo, Roy laid out the basics of poaching lobster, stuffing sausage, and frying tempura-battered moi, while always emphasizing the importance of tasting as you go, creating layers of flavor, and making substitutions with what you have on hand.
